Mexican adobo grilled pork tenderloin
Lean pork tenderloin rubbed with homemade Mexican adobo spice is perfect for summer. Grilled (or grilled) this is a great tasting, smoky, tender piece of meat. Perfect with coriander and lime rice to make with a meal.
Pork tenderloin is the leanest piece of pork, in fact, it’s just as lean as a skinless chicken breast and doesn’t take long to cook, which makes it perfect for busy weekends. If you’re tired of making the same thing for dinner, this is the answer (and bonus, it’s completely people friendly).
This recipe comes from the cookbook Simple Food, Big Flavor, (affil link) by Aarón Sánchez (you may know him as one of the judges on Chopped). Yesterday I made a batch of Aarons Adobo just to make this pork dish. I also used this adobo seasoning for grilled pork chops and chicken breast, so flavorful!

I really craved coriander and lime rice and found it the perfect compliment. Finally press the lime wedges over the pork – delicious! Avocado, Refried Beans or Fiesta Bean Salad would also be fabulous as a side dish.
- If you don’t want to make the dry grater from scratch, you can certainly buy a premixed seasoning and use that one instead.
- If you want to cook this in the air fryer, air fryer at 400F for 20 minutes similar to my recipe for bacon wrapped pork tenderloin.
- To bake it in the oven, bake 425F until an instant thermometer reads 145F in the center. Let the pork rest for about 5 minutes before slicing.

A lean pork tenderloin rubbed with Mexican adobo and grilled or fried to give you a great tasting smoky tender piece of meat.
- 18th ounce pork tenderloin
- 3rd tablespoon Aaron’s Adobe
- 1 teaspoon olive oil
- kosher salt, taste
Rub the fillet with olive oil and pat in the adobo. Set aside for about 30 minutes.
In the meantime, preheat the grill to high or preheat the grill. Generously season the pork with salt.
Grill or grill on high until an instant thermometer reads 145 ° F in the middle, about 20 to 22 minutes, and turn a few times.
Let the pork rest for about 5 minutes before cutting into 8 slices.
