Who doesn't love a good hamburger? I know i do! But I also love going meatless and really enjoying those portobello burgers especially with pesto mayo and mozzarella, so good !! This is a variation on this recipe for grilled portobello mushroom burgers. I marinate and grill the mushrooms and add mozzarella, grilled red onions, roasted peppers and a simple pesto mayonnaise sauce on top. <p>Portobello mushrooms are great meat substitutes if you're trying to cut down on your calorie or red meat consumption. Portobellos have a meaty texture and taste that I underline with a simple marinade of balsamic vinegar, soy sauce, olive oil, and Montreal steak spices.</p>

<p>To prepare portobellos for cooking, drain the stems and wipe the mushroom tips with a paper towel. You can remove the gills on the inside of the mushrooms if you want. However, this is not necessary as they are edible.</p>

<p>These portobello burgers go great with a salad like my Italian chopped salad or summer tomato salad. You can also serve them with Air Fryer French Fries or Skinny Garlic Parmesan Fries.</p>

<li>If you don't have a grill, cook the mushrooms on a grill pan or a cast iron pan on your stove.</li>

<li>Swap the mozzarella for provolone cheese.</li>
<li>If you prefer meat, use lean ground beef or turkey patties instead of mushrooms and top them with the same toppings.</li>

Preparation time: 30th min

Cooking time: fifteen min

Total time: 45 min

  • 2 tablespoon Jarred or homemade pesto
  • 2 tablespoon Light mayo
  • 4th Portobello mushroom caps
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon olive oil
  • 1-1 / 2 TL Steak seasoning like Montreal Steak Grill Mates
  • 4th thick slices of red onion
  • 4th oz fresh mozzarella, thinly cut
  • 1 roasted red pepper, jarred or homemade sliced
  • 4th low-calorie wholemeal rolls, I used Martin
  • Combine the mayo and pesto in a small bowl.

  • In a large bowl, whisk together the vinegar, soy sauce, oil, and Montreal steak seasoning.

  • Place the mushroom caps in the bowl and toss them with sauce and a spoon to coat them evenly. Let stand for 20 to 30 minutes at room temperature and turn a few times.

  • Preheat the grill or inner grill pan over medium heat. When it's hot, brush the wire rack with oil or lightly spray the grill pan.

  • Put the mushrooms on the grill and reserve the marinade for basting. Grill on each side for 5 to 7 minutes or until tender, often brush with marinade.

  • Cover the mushrooms with cheese in the last minute of cooking.

  • While the mushrooms are cooking, grill the onions for about 1 minute on each side and grill the buns until toasted.

  • Finally, distribute the pesto on the rolls, place the grilled portobello mushrooms on the rolls and top with the grilled onions and roasted peppers.
