Watermelon Feta Salad

Need a simple supplement for Memorial Day weekend, that's it! I had a couple of friends over for a barbecue for my boyfriend's birthday serving my grilled lobster tails, grilled steaks, and that simple watermelon feta salad with arugula and mint that was such a hit! Watermelon is the best addition to any summer salad because it is so light and refreshing. I have many other watermelon salads like this grilled peach and grilled peach watermelon burrata salad and the watermelon caprese salad.

Watermelon and Feta Salad

This salad couldn't be easier. The watermelon is so juicy that the salad doesn't even need a dressing. I used a melon baller to cut the watermelon into small balls, but you can also cut them into small pieces. I love how the sweet and salty flavors complement each other. The freshness of the watermelon goes perfectly with the saltiness of the feta cheese, and the fresh mint rounds it off perfectly.

This healthy watermelon salad is packed with nutrients. Watermelon is mostly water that helps you moisturize and fill you up. This fruit is low in calories and full of vitamins C and A. Arugula is a good source of calcium, potassium, folic acid and vitamins C, K and A.

What to serve with watermelon salad

As I said, watermelon feta salad with mint and rocket is great for grilling in summer. It goes well with any grilled protein, like my grilled crab legs, steak kebabs with chimichurri, or grilled salmon with avocado bruschetta. Try zucchini carpaccio, white bean caprese salad, or spiraled apple and cabbage coleslaw for other side dishes alongside this watermelon salad.

  • Swap the feta for goat cheese.

  • 9 cups Watermelon, Cut into large circles with a melon ball
  • 2 loose cups of baby arugula
  • 8 to 10 fresh green mint leaves, chopped
  • 8th ounce Package of feta cheese, crumbled into large pieces
  • Use a melon ball to prepare the melon into large balls. Set aside in a bowl until serving.

  • Drain the liquid from the bowl about 30 minutes before serving (I poured it into a cup and drank!).

  • Place half of the watermelon in a large, shallow bowl and sprinkle over half of the rocket and feta. Repeat with the rest of the watermelon, rocket and feta and top everything with fresh mint.
