Zucchini noodle frittata Ingredients:

  • 1 zucchini (200 g) spiralized
  • Black pepper
  • Slice ½ cup (100 g) tomatoes
  • 4 eggs
  • 2 tablespoons (30 g) goat cheese (crumbled)

Method:

  1. Heat pan with 1 Cal Spray over medium / high heat
  2. Add zucchini and pepper and cook for 3 minutes
  3. Place tomatoes over pasta and press down
  4. Pour eggs over and sprinkle with cheese
  5. Cook for another minute, then cover and reduce the heat, cook for another 5-7 minutes
  6. Cut into 2 inch slices and serve
