  • 2 TBSP. olive oil
  • 200 g organic kale
  • 150 g of chopped mushrooms
  • 150 g of chopped green onions
  • 1/2 teaspoon salt
  • 6 eggs


  1. In a large nonstick pan, heat the oil over medium heat. Add the kale, mushrooms, spring onions and ¼ teaspoon salt and cook until the kale is wilted and the mushrooms are tender (about 8-10 minutes).
  2. Turn the heat on low and crack the eggs straight into the pan with the remaining salt, stirring quickly until the eggs are done (2-3 minutes).
  3. Transfer to a bowl and serve with lemon wedges.
