Spicy Marinated Salmon and Roasted Vegetables

This Spicy Marinated Salmon and Roasted Vegetable Recipe is a really tasty and easy way to increase your fatty fish intake.

Salmon is rich in omega-3 fatty acids, which are known for their anti-inflammatory properties and have beneficial effects on cardiovascular and brain function.

The salmon is paired with delicious roasted vegetables to increase the absorption of vitamin C and fiber.

Using this recipe for your dinner on the Standard Boost plan will use your restricted veggies for the day and ¼ of your serving of milk.

You get 4 servings of protein that you can distribute over lunch and dinner. It also leaves your 2 servings of fat and 2 servings of carbohydrates so you can cut it off with 120g of boiled baby potatoes to use up one of your carbohydrate servings!



  • 540 g salmon fillets
  • 250 g natural yogurt
  • 2 cloves of garlic
  • Chilli flakes as desired
  • Turmeric as desired
  • 1 tbsp Pataks Tandoori Curry Paste
  • 2 zucchini
  • 1 small red onion
  • tomatoes
  • Salt & pepper to taste


  1. In a bowl, mix 200 g of yogurt with the crushed garlic gloves and a tablespoon of Pataks curry paste. Mix well until mixture turns pale red.
  2. Add the chilli flakes and turmeric to the yogurt mixture as desired, half a teaspoon of each gives a mild kick or add more if you like a spicier dish. Sprinkle again with salt and pepper if you like.
  3. Line a baking sheet with foil and place the salmon fillets on the foil.
  4. Brush the salmon with the yogurt mixture and leave to marinate in the refrigerator for at least an hour.
  5. Mix the zucchini, tomatoes, onions, garlic and red chilli flakes in a separate baking dish. Spray with 1 cal. Spray and season with salt and pepper. Mix well
  6. After marinating, place the salmon fillets in a preheated oven for about 20 minutes or until the salmon flakes easily.
  7. Put the prepared vegetables in the oven and fry them until the vegetables are tender and lightly golden [about 18-20 minutes]. You should be ready for the perfect delicious dish at the same time as the salmon.
  8. Use leftover natural yogurt to drizzle over the salmon fillets.
