These Tuna Nicoise Salad Protein Pots are a great option for on the go and convenient when preparing food for the next day. They would make a great picnic lunch and are packed with 30g of protein, so they're super filling too.

The green beans are a good source of fiber, potassium, and folic acid, and an excellent source of protein, iron, and zinc. They contain antioxidants similar to those in green tea, also known as catechins, that can help improve heart health and treat diabetes.

Ingredients for tuna nicoise salad protein pots

• 4 large eggs
• 320 g green beans
• 4 quartered tomatoes
• 400 g of tuna in spring water
• 160 ml low-fat French dressing

Directions

1. Boil the eggs for 8-10 minutes depending on whether you want a soft or hard yolk, then at the same time steam the green beans over the pan for 8-10 minutes until soft. Cool the eggs and beans under running water and carefully peel and quarter the eggs. Let cool down.
2. Put ¼ of the beans in a lunch pot. Top with 1 quartered tomato, 100 g tuna and 1 quartered eggs and spoon on 40 ml low-fat French dressing. Seal until consumption. Repeat until you have 4 protein pots ready to use.
